So if I move in my movement phase, then I am assaulted in my opponents next assault phase. Does that Salvo Weapon shoot the movement shots or does it shoot the non-movement shots? I believe it is the latter, but the question because my shooting phase has already passed. I think I know the answer, just want someone to let me know if I am right or wrong.

I would think you fire the full number of shots, because you didn't move in the previous movement phase. Previous phase being on your opponents turn.

You fire the full number of shots.

There is no rule saying you can't, or that shooting is limited in any way (except for Blast weapons) when firing Overwatch, so you fire normally.
With a Salvo weapon, normally means you get to choose between all shots or move and less shots.

The Salvo rules do not specifically say that movement is restricted to the firing model's previous movement phase but it's certainly implied and, on that basis, you would indeed get the full number of shots. Any other interpretation leads to some really wacky results as it basically means you can only ever get the full number of shots if you don't move at all during the game!
