Personally I think vehicles should be relatively tough but different types of vehicles should reflect that in different ways. Imperial vehicles are typically slow moving and heavily armoured whereas our vehicles are lightning fast but paper thin. At the moment we are paying for that speed but it offers no protection so our vehicles are too fragile. Increasing AV or HP is not appropriate but a speed-based dodge save would seem suitable. It also opens up the system to differentiate between weapons that ignore cover and weapons that are capable of tracking fast-moving objects.

I haven't played anything else than 7ed, but I heard from some older Fritz tactics videos about vypers and wave serpents moving and getting jink save like that. Was this scapped when moving to 7ed or is this older thing? Did 2ed and 3ed sport this kind of moving cover save?

Cover saves did not exist in RT or 2nd ed - it was hit modifiers for moving fast.

Cover saves came in in 3rd ed and yes - jink was not a thing at first - as in it was not a declared action. So long as you moved you got the save basically

I think it was that way in 6th too, or at least some version of it where moving improved your save or something. Can't recall the specifics.
